Mini Pizzas
Ingredients
- 2 English muffins, cut in half horizontally
- ½ cup (125 ml) homemade or store-bought tomato sauce
- 8 slices cold turkey (not too large)
- 8 slices mozzarella cheese, halved
- 8 slices salami
- 10 cherry tomatoes, halved
- Small basil leaves, to taste
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C).
- On a baking sheet, place the English muffin halves cut-side up. Cover with the tomato sauce. Top with a slice of turkey, a half slice of mozzarella, a slice of salami and another half slice of mozzarella. Repeat in order to have two layers of toppings on each muffin half.
- Bake for 10 minutes or until the cheese has melted. To brown the cheese, continue to cook the pizzas on broil for 2 to 3 minutes. Let cool for 5 minutes before serving.
- When ready to serve, garnish the mini pizzas with the cherry tomatoes and basil leaves.
