Breaded Fish Sticks

Ingredients

  • 1/2 cup (75 g) unbleached all-purpose flour
  • 3 eggs
  • 2 cups (160 g) panko breadcrumbs (see note)
  • 1/2 tsp (2.5 ml) onion powder (optional)
  • 11/2 lb (675 g) haddock fillets, patted dry and cut into sticks
  • 3/4 cup (180 ml) canola oil

Instructions

  1. Place the flour in a shallow bowl. In a second bowl, beat the eggs lightly with a fork. In a third bowl, mix the breadcrumbs with the onion powder.
  2. Add salt and pepper to the fish sticks. Dredge them in the flour, shaking off any excess. Dip the fish in the beaten eggs, letting the excess drip off. Coat the sticks with the breadcrumbs, pressing them into the mixture.
  3. In a non-stick skillet over medium high heat, cook the fish in hot oil for 2 to 3 minutes on each side or until they’re golden brown. Watch out for oil splashes. Drain on a plate lined with paper towels. Repeat with the rest of the sticks, adding oil if necessary.
  4. Serve the fish sticks with tartar sauce, if desired.
