In a small pot, bring all of the ingredients to a boil. Simmer for 5 minutes.

Place a sieve over a bowl. Strain the strawberry syrup through the sieve, pressing down on the strawberries with the back of a ladle to extract as much juice as possible. Compost the residue. Let cool. Cover and refrigerate until completely chilled, about 1 hour. The strawberry syrup will keep for 3 weeks in an airtight container in the refrigerator. You will obtain enough syrup to make 6 bubble teas.
