In a large non-stick skillet over medium-high heat, brown the pork chops in the oil for 3 minutes on each side. Season with salt and pepper. Let cool on a plate for 10 minutes.

Meanwhile, in a bowl, combine the remaining ingredients.

On a work surface, pat the pork chops dry with paper towels. Using a knife, cut away the excess fat from the pork. Dice the pork chops and add to the bowl of salad. Mix well. Adjust the seasoning.
