Grilled Eggplant Bites with Yogurt and Nuts

- 1/2 cup (125 ml) plain yogurt (min. 4% MF)
- 1/2 cup (125 ml) grated sharp cheddar
- 1/4 cup (60 ml) toasted almonds, chopped
- 1/4 cup (60 ml) walnuts, chopped
- 1 clove garlic, finely chopped
- 2 teaspoons (10 ml) chopped fresh dill
- 24 small slices eggplant, about 2 inches (5 cm) across and 1/8 inch (1/4 cm) thick
- 3 tablespoons (45 ml) olive oil
- Salt and pepper

- In a bowl, combine the yogurt, cheddar, nuts, garlic and dill. Season with salt and pepper. Refrigerate.
- Preheat the grill, setting the burners to high.
- Brush the eggplant slices with oil. Season with salt and pepper. Grill for 1 to 2 minutes per side. Let cool.
- Spoon about 10 ml (2 teaspoons) of the nut mixture on half the eggplant slices. Lay a second slice on top.
- Serve warm or cold as an hors d’oeuvre.
