Instructions

  1. 1

In a bowl, combine the flour, sugar and salt. Form a well at the centre of the flour and add the yogurt, water and oil. Mix with a fork just until all of the flour has been absorbed.

  2. 2

Place the dough on a work surface and knead with your hands for 5 minutes or until soft and smooth. Flour the work surface as needed. Place the dough in a clean bowl. Cover and let rest for 1 hour.

  3. 3

On a lightly floured work surface, cut the dough into 8 equal pieces. Shape each piece into a ball. Let rest, uncovered, for 10 minutes.

  4. 4

Preheat the grill, setting the burners to medium-high. Oil the grate.

  5. 5

Using a rolling pin, roll each ball of dough into a 6-inch (15 cm) circle. Sprinkle with flour as needed. Transfer the circles of dough to a baking sheet.

  6. 6

Place 4 circles of dough at a time on the barbecue grill. Close the lid and cook for 1 minute 30 seconds. Once the breads start to puff up, flip them over. Continue to cook on the second side for 1 minute or until nicely puffed up. Set aside on a plate. Cover the flatbreads with a clean, dry dishcloth to keep them warm and soft until ready to serve.

Flatbread is part of the culinary traditions of countries in the Maghreb and Mediterranean regions. They’re perfect for serving with grilled meats or veggies, or to dip in sauces and spreads. All that’s required is to mix the ingredients in a bowl and knead for a few minutes. Shape them into discs and cook them directly on the grill. The bread is soft and puffy thanks to the addition of yogurt, and is sure to satisfy.
