Eton Mess with Roasted Strawberries
Go all out for your guests with this dessert at the centre of the table. Even though its appearance looks imposing, it’s actually easy to make. Simply roast some strawberries in the oven and collect their cooking juices, which have been transformed into a strawberry syrup. Mix the cooked fruit with whipped cream, and layer with store-bought meringues, pistachios and fresh strawberries. It’s a great way to enjoy the first berries of the season.

Crispy Smash Burgers with Barbecue Sauce
These impressive-looking smash burgers, in collaboration with Heinz, are topped with julienned fried potatoes. Coat them with cornstarch before cooking because you want them to be very crispy, even if they contain a lot of water. Then, brush the meat patties with sweet and smoky barbecue sauce, and spread cream cheese on the buns for a rich, creamy texture. All that’s left to do is take a bite and try not to let anything fall out.

Anora Lia Collier’s Venison Roast
«This is a great recipe to discover the Huron-Wendat First Nation, shared with me by a great hunter friend. Start by rubbing a piece of game meat with butter, yellow mustard, Dijon mustard and salted herbs from the Lower St. Lawrence before letting it rest in the refrigerator. It’s a simple dish that can be prepared one of two ways: either directly over a fire, or in the oven, depending on the season. A crust is formed on the surface of the meat, developing the flavours and allowing for the taste of the meat to shine through.» — Chef Anora Lia Collier

Lysanne O’Bomsawin’s Vegan Sagamité
«This soup, reminiscent of minestrone, dates back to the 18th century. It’s made with carrots and onions, as well as what’s known as the «three sisters» among many Indigenous communities: squash, beans and corn. There are many versions of this soup, some with meat, others vegan (like this one) made with sunflower seeds, which is satiating, easy to make and delicious. There’s no need for aromatics to flavour the broth; the taste of the vegetables is sufficient. In my Abenaki community of Odanak, it’s a dish we eat all year round.» — Chef Lysanne O’Bomsawin
