Octopus Salad with Lentils, Fennel and Citrus
Grown in Umbria, Abruzzo and Sicily, most dried lentil varieties don’t need soaking before cooking. For this recipe, our lentils absorb the salad’s citrusy dressing, helping their flavour pop so that they really come alive when paired with perfectly grilled octopus.

Fried Chickpea Polenta
Also known as garbanzo beans, chickpeas are used in many different ways all across Italy. We decided to use chickpea flour, transforming it into a “polenta” called panissa. Mixed with broth, garlic and salt, then chilled to set, the finger-like strips are fried until golden brown. Pork Belly Roast
For some Italian celebrations, this moist, boneless roast uses an entire pig—talk about a crowd-pleaser! For our more minimalist version, we use the belly (ask your butcher for a 50% fat ratio), brine it before smothering it in garlic and herbs and cook it slow and low. The result? Pork Chops with Citrus and Juniper Berries
This sophisticated pork recipe could not be simpler. The real secret to its success is the thickness of the meat: We like ours cut about an inch thick so it takes on a nice pan-seared colour while staying perfectly tender throughout as it cooks. For that extra Italian flair (and to elevate flavour), we add orange zest, lemon, garlic, juniper berries, bay leaves, fresh parsley and a hit of honey to make a citrusy glaze that will have everyone licking their chops.
