This homemade trout confit is delicious served hot or cold in a salad or sandwich.

With the rack in the middle position, preheat the oven to 250°F (120°C). Line a baking sheet or a baking dish with parchment paper.

Place the trout on the baking sheet skin-side down. Rub the flesh-side with the steak spice. Drizzle with the oil.

Bake for 20 minutes or until the fish flakes apart with a fork.
