In a pot, bring the orange juice, orange slices, lemon juice, sugar and cognac to a boil. Simmer for 1 minute. Remove from the heat and let cool.

In a large pitcher, combine the wine, peach, apple and cinnamon sticks with the cooled orange syrup. Cover and let marinate overnight in the refrigerator.

Strain the sangria through a sieve placed over a large measuring cup or pitcher, if desired. When ready to serve, add more fresh fruit and ice cubes.
