In a non-stick saucepan, soften the onions in the butter until golden, about 20 minutes. Season with salt and pepper.Sprinkle with the flour and continue cooking for 1 minute. Add the ale, garlic and thyme. Reduce by half. Add the chicken broth and bring to a boil. Remove from the heat and stir in the chocolate. Adjust the seasoning.

With the rack in the middle position, preheat the broiler. Place 4 ovenproof bowls on a baking sheet.

Ladle the soup into the bowls. Top each bowl of soup with 2 slices of bread and cover each slice of bread with a slice of cheese. Broil in the oven until the cheese melts and is golden.
