With the rack in the middle position, preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper.

In a bowl, combine the flour and baking powder. Set aside.

In another bowl, cream the butter, sugar and vanilla with an electric mixer. Add the potatoes and beat until smooth. With a wooden spoon, stir in the dry ingredients alternately with the cream.

On a floured work surface, flatten the dough with your hands until it is about 2-cm (3/4-inch) thick.

With a 6-cm (2 1/2-inch) round cookie cutter, cut biscuits from the dough. Combine and flatten the scraps and cut more biscuits. You should have 10 biscuits in all.

Place the biscuits on the baking sheet. Bake until a toothpick inserted in the centre of a biscuit comes out clean, 16 to 18 minutes. Let cool.

Serve warm or cold.
