    With the rack in the middle position, preheat the oven to 180 °C (350 °F). Line a baking sheet with parchment paper.

    In a saucepan, melt the butter, sugar, and honey, stirring until the sugar has dissolved. Remove from the heat and let cool for 2 minutes. Whisk in the flour and ginger.

    On a baking sheet, place 15 ml (1 tablespoon) of batter per cookie. Prepare 3 cookies per sheet.

    Bake for 4 to 5 minutes, until lightly browned. Take out of the oven, let cool for about 2 minutes on the baking sheet, then loosen the cookies with a spatula. While still warm, shape into tuiles, tulips, or cigarettes. Cool and unmould.
