Cinnamon Pear Butter

Instructions

    Peel, core and cut the pears into cubes. As you cut them, immediately place them in a bowl with the lemon juice to prevent oxidation.

    In a food processor or blender, purée the pears until smooth with the lemon juice and sugar. Strain.

    In a saucepan, bring the purée and cinnamon stick to a boil. Simmer gently for about 1 hour and 30 minutes or until it reduces by half. Let cool and refrigerate until completely chilled. Serve as a snack with cheese and figs or olives crackers.
