White Naan Pizzas with Sour Cream
White pizza gets its name due to its lack of tomato sauce, replaced with one made from cheese and cream. In this recipe, we went with a blend of sour cream (perfect for using your leftovers!), Parmesan cheese and chili pepper. Spread it on naan bread, and then top with salami, red onion and parsley, which add texture and flavour.

Everything Bagel and Smoked Salmon Tart
Who doesn’t enjoy a bagel loaded with cream cheese and smoked salmon? In collaboration with Philadelphia, we went one step further and developed an everything bagel tart that’s perfect for serving during brunch with friends. The base consists of store-bought puff pastry whose edges are brushed with milk and then sprinkled with everything bagel seasoning to mimic the looks of the classic bread roll. Once baked, spread a generous layer of tangy cream cheese over it and top with all the fixings. There’s smoked salmon, pickled onions and capers, as well as sliced cucumbers and lemon slices for a touch of freshness. This light and flaky treat is sure to be a hit around the table.

Dominique Rioux’s Jalapeño Popper-Stuffed Pork Parcels with Red Cabbage Slaw
This recipe by chef Dominique Giroux is an original dish to make in the fall. To make these parcels, stuff the jalapeño peppers with the cheese and onion mixture. Then wrap them in a ground pork mixture before wrapping them in a pork tenderloin cutlet. Then roll each in a slice of bacon and gently tie with butcher’s twine before cooking. Serve with veggies and a red cabbage slaw for a meal unlike any other.

Robin Filteau-Boucher’s Beef Tartare
This beef tartare recipe by Chef Robin Filteau-Boucher, from Montreal’s Parapluie restaurant, is a French bistro classic. Made using ribeye, a very tender cut of beef, it’s finely diced and then combined with mayonnaise, chives and olive oil. Bone marrow slow cooked in the oven is also added. Garnish with julienned potatoes and Louis d’Or cheese and it’s ready to enjoy as a starter or a meal served with onion rings.
