On a work surface, slice the steak against the grain. In a bowl, combine the meat with the baking soda. Let marinate for 15 minutes (see note).

Rinse the meat under cold running water. Drain and pat dry with paper towels. Season with salt and pepper.

Meanwhile, in a pot of salted boiling water, blanch the broccoli for 2 minutes. Drain.
