Baked Pineapple with Citrus Syrup

- 1 fresh pineapple
- 1/3 cup (75 ml) maple syrup
- 1/2 cup (125 ml) orange juice
- 1 tablespoon (15 ml) lemon juice
- 2 tablespoons (30 ml) lime juice
- 2 tablespoons (30 ml) fresh lemon balm, chopped
- Sea salt and freshly ground pepper

- With the rack in the lowest position, preheat the oven to 150 °C (300 °F).
- Lay the pineapple directly on the oven rack. Bake for 2 hours.
- Meanwhile, place all the syrup ingredients in a saucepan. Bring to a boil and simmer until the syrup has reduced by two thirds, about 10 minutes.
- Remove the leaves from the pineapple, peel and cut into quarters. Core and cut the pineapple into thin slices. Place the slices on a beautiful serving platter. Drizzle with the hot syrup. Sprinkle lightly with sea salt and freshly ground pepper.
- Serve warm.
