Chickpeas, Apple and Zucchini Salad

Ingredients

  • 1 apple (such as Cortland or Granny Smith), peeled and diced
  • 1 onion, chopped
  • 2 tbsp (30 ml) honey
  • 1 tbsp (15 ml) olive oil
  • 1 can (19 oz/540 ml) chickpeas, rinsed and drained
  • 1 cup (250 ml) chicken broth
  • 1 green zucchini, diced

Instructions

  1. In a pot, cook the apple and onion in the honey and oil for about 5 minutes or until lightly caramelized. Season with salt and pepper.
  2. Add the chickpeas and broth. Bring to a boil and simmer for about 5 minutes or until the broth has almost completely evaporated. Add the zucchini and cook for 2 to 3 minutes. Adjust the seasoning. Serve warm.
