Beef Bourguignon Skewers

- 1 cup (250 ml) chicken broth
- 3/4 cup (180 ml) red wine
- 1/4 cup (60 ml) balsamic vinegar
- 2 tablespoons (30 ml) tomato paste
- 3 sprigs fresh thyme
- 2 cloves garlic, finely chopped
- 1 bay leaf
- 2 tablespoons (30 ml) butter
- 8 pearl onions
- 1 1/2 lb (675 g) beef tenderloin, striploin or sirloin, cut into 12 cubes
- 8 small white button mushrooms
- 1 small red bell pepper, seeded and cut into 8 cubes
- 4 large wooden skewers, soaked in water for 30 minutes
- 1/4 cup (60 ml) parsley, chopped
- Salt and pepper
