Strawberry Shortcake Cocktail
Ingredients
- 3/4 cup (180 ml) 35% cream
- Zest of 1 lemon
- 1 1/2 cups (375 ml) fresh strawberries
- 1 1/2 cups (375 ml) chilled apple juice
- 1/2 cup (125 ml) dark rum
- 1/3 cup (75 ml) sugar
- 2 tablespoons (30 ml) lemon juice
- 1/2 cup (125 ml) graham cracker crumbs
- 1 lemon wedge
- 4 daiquiri glasses, in the freezer
- Sliced fresh strawberries for garnishing
- 1 tablespoon (15 ml) honey
Instructions
- In a bowl, whip the cream, lemon zest and honey with an electric mixer until stiff peaks form. Refrigerate.
- In a blender, purée the strawberries, apple juice, rum, sugar and lemon juice.
- Place the crumbs on a plate.
- Remove the glasses from the freezer. Moisten the rim of each glass with the lemon wedge and dip the rims in the crumbs.
- Divide the cocktail among the glasses. Top with whipped cream and decorate with
- strawberry slices.
