  • 2 tablespoons (30 ml) butter
  • 2 tablespoons (30 ml) flour
  • 1 cup (250 ml) milk
  • 1/4 cup (60 ml) grated Gruyère cheese
  • 1 pinch nutmeg
  • 1 1/2 lb (675 g) asparagus, trimmed
  • 2 tablespoons (30 ml) olive oil
  • 4 slices prosciutto
  • 4 large slices country-style bread (same length as asparagus spears)
  • Whole-grain mustard to taste
  • 4 large slices Gruyère cheese
  • Salt and pepper

  1. Melt the butter in a saucepan over medium heat. Add the flour and cook for 1 minute, stirring constantly. Add the milk and bring to a boil while stirring with a whisk. Simmer gently for about 5 minutes. Remove from the heat and add the grated cheese and the nutmeg. Stir until the cheese melts. Season with salt and pepper. Set aside.
