Lemonade and Strawberry Popsicles
The zing of fresh lemon juice is the perfect partner for a smashing strawberry purée. Just a dash of simple syrup strikes the right balance between sweet and sour for the ultimate party pop.
Ingredients
- 1/2 cup (125 ml) water
- 1/2 cup (105 g) sugar
- 1/2 cup (125 ml) lemon juice
- 1/2 cup (125 ml) seedless strawberry purée (see note)
Instructions
- In a small pot over high heat, warm the water and sugar, stirring, until the sugar is completely dissolved. Remove from the heat and add the lemon juice and strawberry purée. Pour into the Popsicle moulds and place a Popsicle stick in the centre of each Popsicle.
- Freeze for 6 hours or until the Popsicles are firm. Before unmoulding, run the base of the moulds under warm water.
