  • 3/4 cup (180 ml) 2% plain Greek yogurt
  • 1/4 cup (60 ml) 35% cream
  • 1 tbsp chives, finely chopped
  • 1/2 shallot, finely chopped (optional)
  • 1/2 lemon, zest finely grated
  • 1 tsp (5 ml) lemon juice

  1. In a bowl, combine the yogurt and cream.
  2. Place a sieve lined with a clean dishcloth or cheesecloth over another bowl. Pour the yogurt mixture into the sieve. Cover with plastic wrap. Let strain for 4 to 12 hours or overnight in the refrigerator. Discard the liquid.
  3. Place the strained yogurt mixture in the empty bowl. Add the remaining ingredients. Season with salt and pepper. Mix well. Serve with bagels, hors-d’oeuvres or vegetable crudités.
