Instructions

    With the mandolin, thinly slice the potatoes lengthwise. Rinse the slices and pat dry.

    In a large skillet over medium heat, brown the potato slices in the olive oil a dozen at a time until golden brown and crispy, adding oil as needed.

    Drain on paper towels. Season with salt and pepper. Set aside at room temperature.
