In a large non-stick skillet over medium-high heat, brown the sausage meat in half (2 tbsp/30 ml) of the oil, breaking it up with a wooden spoon. Add the garlic and cook for 1 minute while stirring.

Sprinkle the flour over the meat and continue to cook for 1 minute while stirring. Add the broth, beans, mustard and spices. Mix well. Bring to a boil. Simmer for 5 minutes or until the sauce thickens slightly. Season with salt and pepper. Add the kale and stir just until wilted. Adjust the seasoning.

Meanwhile, in a small skillet, brown the breadcrumbs in the remaining oil. Transfer to a bowl. Add the Parmesan and chives. Season with pepper and mix well.

Serve the sausage and bean mixture in shallow bowls. Sprinkle with the breadcrumb mixture. Serve immediately.
