In a large bowl, using a wooden spoon, or in a stand mixer fitted with the dough hook, combine the flour, sugar, yeast and salt. Add the water and mix just until the dough starts to form a ball. Knead the dough with your hands for 5 minutes on a lightly floured work surface, or with the dough hook, just until smooth.

Form the dough into a ball and place in a clean, lightly oiled bowl, turning to coat with the oil. Cover and let rise in a warm spot for 2 or 3 hours or until the dough has doubled in volume, or refrigerate for 24 to 48 hours in an airtight container or in a pot with a lid.

On a lightly floured work surface, cut the dough into 4 equal pieces. Shape each piece into a ball and place in a lightly floured large airtight container or baking sheet. Cover with plastic wrap (see note). Let rise for 1 hour or until doubled in volume.
