Ingredients

1/4 cup (60 ml) mayonnaise
1 tbsp dill, finely chopped
1 lemon, zest finely grated
2 tsp (10 ml) lemon juice
1/4 cup (60 ml) sour cream
1 tbsp (15 ml) olive oil
1 tbsp (15 ml) whole-grain mustard
1 tbsp parsley, finely chopped
2 tsp (10 ml) lemon juice
1 green onion, chopped
1 lb (450 g) Nordic shrimp, fresh or frozen and thawed, peeled and patted very dry
1 1/4 cups (145 g) celeriac, julienned on a mandoline or grated
1/2 green apple, julienned on a mandoline or grated
Tabasco-style sauce, to taste
4 brioche hot dog buns
8 Boston lettuce leaves
1 Lebanese cucumber, sliced into thin rounds on a mandoline
1 radish, sliced into thin rounds on a mandoline
3 tbsp fresh samphire (see note)
Dill fronds, to taste
