In a large bowl, combine the flour, salt and yeast. Set aside.

Add the sugar in the warm milk and stir to dissolve. Set aside.

Make a well in the centre of the dry ingredients and pour in the milk mixture. Blend with a fork, then with your hands. Once the dough is smooth, add the yogurt and knead until the dough pulls away from the bowl.

On a floured work surface, knead the dough for 5 minutes or until smooth and elastic. Place in a lightly buttered bowl and turn to coat the dough with butter.

Cover with a damp cloth and let rise for 45 minutes to 1 hour in a warm place (in a microwave with a glass of hot water for example), until the dough doubles in volume.

Preheat the oven to 250 °C (500 °F).

Place a large baking sheet in the oven.

Punch the dough down. Cut into 6 pieces.

Stretch each piece and give it the shape of a pear of about 20-cm (8-inch) long. Place the bread on the hot baking sheet. Bake for 6 to 7 minutes or until nicely browned. Right out of the oven, brush with melted butter or ghee. Serve immediately.
