Mortadella is having quite the comeback, and we love it for its richness and its finesse. Given its mild flavour, it needs to be elevated with savoury toppings like a honey, lemon and pistachio garnish. Tie it all together with creamy ricotta, served in a focaccia. This sandwich is a work of art.

- 1/2 cup (65 g) roasted shelled pistachios, finely chopped
- 1 tbsp (15 ml) olive oil, plus more for drizzling
- 1 tbsp (15 ml) honey
- 1 tbsp (15 ml) lemon juice
- 1/2 tsp red pepper flakes
- 1 lemon, zest finely grated
- 2 pieces focaccia bread, homemade (see recipe) or store-bought, each about 5 1/2 x 3 1/2 inches (14 x 9 cm) (about 1/4 of the focaccia, cut into 2 pieces)
- 1/2 cup (125 ml) ricotta cheese
- 1 package (175 g) sliced mortadella
- 1 1/4 cups (30 g) arugula
