In a pot over medium-high heat, melt ¼ cup (55 g) of the butter. Add the flour and spices. Cook, stirring continuously, for 2 minutes or until the mixture is lightly golden. Pour in the broth. Bring to a boil and simmer for 5 to 8 minutes or until the sauce thickens. Season with salt and pepper.

Meanwhile, in a large non-stick skillet over medium-high heat, soften the onions and garlic in the remaining butter. Add the green peas and the duck and stir until heated through. Season with salt and pepper.

Divide the duck mixture on 4 slices of bread. Drizzle with some of the sauce. Top with the remaining slices of bread, and drizzle with the remaining sauce. Serve immediately.
