Fresh Herb and Oat Soup

Instructions

    In a food processor, finely chop the cilantro, parsley and garlic.

    In a pot over medium heat, soften the onion in the oil for 3 minutes. Add the spices and herb mixture. Cook for 1 minute while stirring. Add the broth and oats. Bring to a boil. Simmer for 25 minutes or until the oats are tender. Season with salt and pepper. Remove from the heat. Let sit for 5 minutes to allow the oats to continue to plump up and the soup to thicken.

    Serve the soup in bowls. Garnish with the yogurt, mint and a drizzle of honey.
