Ингредиенты

  • 4 cups (380 g) leeks, thinly sliced (about 2 large leeks)
  • 2 potatoes, peeled and cubed
  • 1 celery stalk, chopped
  • 3 tbsp (45 ml) olive oil
  • 5 cups (1.25 litres) chicken broth
  • 1 bay leaf
  • ½ tsp thyme leaves, finely chopped
  • 3 ripe pears, peeled, seeded and cubed
  • ½ cup (125 ml) 15% cooking cream

Инструкция

  1. In a saucepan over medium-high heat, soften the leeks, potatoes and celery in the oil. Add the broth, bay leaf and thyme. Bring to a boil. Cover and simmer until the vegetables are tender.
  2. Add the pears and continue cooking for 20 minutes. Remove and compost the bay leaf.
  3. In a blender, purée the soup until smooth. Season with salt and pepper. Return the soup to the saucepan. Add the cream.
