The golden rule when it comes to braising is patience. Meat that’s simmered in stock (as with this recipe) is ready when it falls apart with the touch of a fork—and that takes time. We cooked the sweet potatoes in a separate dish to avoid overcooking and dissolving them into the sauce. But when reunited, the flavour of the tender pork doused in maple syrup and the garlicky gooeyness of the potatoes warms us to the core.

Belgian-Style Waffles
Get ready to blow your stack: Belgian tradition dictates using pearl sugar—it melts on the surface, creating a caramelized crust that has a satisfying crunch on the outside and a chewy tender inside. What makes this recipe extra special is that it includes yeast, so the waffles rise high and thick.

Oat and Almond Waffles
To create these crispy, fluffy delights we replaced wheat flour with magic ingredients: almond powder and oat flour. The protein-packed combination makes for a flavourful waffle with an addictive chew. And even if you’re not gluten intolerant, this batter hits a home run.

Beef Keftas on Naan Bread
Tell your kids to roll up their sleeves and hand over the ice cream scoop: Who knew you could use it to shape the kefta (traditionally, a ground lamb mixture) into balls and then flatten them into patties using your hands? Dinner has never been this easy, or fun.

Rolled Veal Roast with Hot Pepper and Herbs
This isn’t your regular Sunday roast. First: It’s rolled. Second: It’s steamed rather than roasted, cooked in its own juices in a covered pot until the very end, when the cover is removed and the veal is blasted under the broiler. Tenderness? Insane. Flavour? Out of this world, thanks to the intensity of the jus and the judicious mix of herbs and spices (cue the rosemary, sage, fennel seeds and red pepper flakes).

Maple, Raspberry and White Chocolate Yule Log
Go beyond the bûche to give an authentic look to this fabulous dessert. When hardened, the layer of white chocolate shatters and mimics the texture of bark, while the cake is extra moist thanks to the drizzle of oil added to the batter. We’re confident you’ll be asked to make it again next year.

Braised Beef Pie
Fall-apart tender chunks of braised beef. A golden brown crust just begging to be sliced. Vegetables dizzy with garlic, onion and red wine. This savoury pie, a riff on the quintessentially British dish, has all the elements of a Canadian classic.
