Apple and Mint Couscous

    In a large saucepan, soften the vegetables in the oil. Add the broth and bring to a boil. Season with salt and pepper. Remove from the heat and add the couscous. Cover and let stand for 5 minutes. Fluff with a fork.

    Gently stir in the apple, mint and butter. Adjust the seasoning. Delicious with Mediterranean-Style Leg of Lamb.
