Agrikol’s Haitian Marinade

Ингредиенты

  • 3 garlic cloves, peeled and halved
  • 1 red bell pepper, seeded and cubed
  • 1 Scotch bonnet or habanero chili pepper, halved and seeded
  • ½ leek, coarsely chopped
  • ½ cup (20 g) flat-leaf parsley leaves and stems, coarsely chopped
  • ½ cup (20 g) cilantro leaves and stems, coarsely chopped
  • 1/3 cup (75 ml) vegetable oil
  • 1 tsp salt
  • ½ tsp ground black pepper

  1. In a food processor, coarsely chop the garlic, bell pepper, chili pepper, leek and herbs. Add the oil, salt and pepper. Blend until the mixture emulsifies.
  2. Use the remaining marinade for <a href="https://www.ricardocuisine.com/en/recipes/9057-agrikol-s-sticky-rice"target="_blank">sticky rice</a> or as a marinade for other meat and fish dishes. The marinade will keep for 1 week in an airtight container in the refrigerator or it can be frozen.
