Asian-Style Oven-Baked Chicken

Ingredients

  • 1 litre (4 cups) chicken broth
  • 500 ml (2 cups) parboiled rice
  • 6 skinless and boneless chicken thighs
  • 500 ml (2 cups) thinly sliced green cabbage
  • 1 onion, thinly sliced
  • 1 red bell pepper, cut into strips
  • 1 broccoli, cut into large florets
  • 115 g (¼ lb) snow peas, trimmed and halved
  • 45 ml (3 tbsp) olive oil
  • 75 ml (1/3 cup) hoisin sauce
  • 2.5 ml (½ tsp) sambal oelek
  • Salt and pepper

Instructions

  1. In a saucepan, bring the chicken broth to a boil. Add the rice. Cover and cook over low heat for about 18 minutes or until the liquid has been absorbed. Remove from the heat. Stir and let rest, covered, for 3 to 5 minutes, until the rice is tender.
