Maple Sap and Shrimp Soup
Ingredients
- 2 litres (8 cups) pure maple sap
- 16 large peeled shrimp
- 500 ml (2 cups) baby spinach
- 1 medium carrot, peeled and grated
- 1 green onion, thinly sliced
- 15 ml (1 tbsp) chopped red bell pepper
- 5 ml (1 tsp) lime juice
Instructions
- In a large pot, reduce the maple sap by half (about 25 minutes).
- In a large bowl, combine the remaining ingredients. Top with the hot maple sap and serve.
