Salmon Cakes with Tarragon Mayonnaise
Ingredients
- 1/2 cup (125 ml) mayonnaise
- 1 tbsp (15 ml) lemon juice
- 1 tsp chopped fresh tarragon
- 1 egg yolk
- 1 ½ lb (675 g) skinless salmon fillet
- 24 saltine crackers
- 3 eggs, lightly beaten
- 1/4 cup (60 ml) mayonnaise
- 1 tbsp (15 ml) sambal oelek (or to taste)
- 1/4 cup (60 ml) olive oil
- Salt and pepper
- 1 ½ lb (675 g) asparagus, trimmed and cooked al dente
Instructions
- In a bowl, combine all the ingredients. Keep in the refrigerator.
