  • 1 tbsp (15 ml) lemon juice
  • 1 tsp chopped fresh tarragon
  • 1 egg yolk
  • 1 ½ lb (675 g) skinless salmon fillet
  • 24 saltine crackers
  • 3 eggs, lightly beaten
  • 1/4 cup (60 ml) mayonnaise
  • 1 tbsp (15 ml) sambal oelek (or to taste)
  • 1/4 cup (60 ml) olive oil
  • Salt and pepper
  • 1 ½ lb (675 g) asparagus, trimmed and cooked al dente
