Green Mango and Curried Chicken Salad
Ingredients
- 3 cups (750 ml) bean sprouts
- 1 unripe mango, peeled and cut into julienne
- 1 red bell pepper, seeded and cut into thin strips
- 2 green onions, chopped
- 2 tablespoons (30 ml) mirin
- 2 tablespoons (30 ml) rice vinegar
- 1 tablespoon (15 ml) fish sauce (nuoc mam)
- 1/2 teaspoon (2.5 ml) sambal oelek
- 2 Curried Chicken breast halved, cooked, chilled, and sliced
- 1 tablespoon (15 ml) chopped fresh mint (optional)
Instructions
- In a bowl, combine all the ingredients except for the chicken and mint. Serve the curried chicken with the green mango salad. Sprinkle with the mint.
