Pistachio Nougatine

Ingredients

  • 2 tbsp (30 ml) water
  • 2 tbsp (30 ml) light corn syrup
  • 2 tbsp sugar
  • 6 tbsp (50 g) unsalted pistachios, roasted

Instructions

  1. In a pot, bring the water, corn syrup and sugar to a boil. Cook without stirring until the caramel is an amber colour.
  2. Add the pistachios and stir to combine. Immediately pour onto a sheet of parchment paper or a silicone mat. With a spatula, rapidly spread out the mixture. Let cool completely. On a work surface, coarsely chop with a knife.
