Ингредиенты

  • 2 onions, thinly sliced
  • 2 tbsp butter
  • 3 garlic cloves, finely chopped
  • 1/4 tsp red pepper flakes, or more to taste
  • 5 cups (1.25 litres) chicken broth
  • 24 veal meatballs, fresh or frozen
  • 2 cups (500 ml) cooked spaghetti squash, shredded with a fork (about 1/2 squash) (see note)
  • 2 cups (60 g) spinach

Инструкция

  1. In a large pot over medium heat, brown the onions in the butter. Season with salt and pepper. Add the garlic and red pepper flakes. Cook for 1 minute while stirring.
  2. Add the broth and meatballs to the pot. Bring to a boil. Simmer for 10 minutes. Add the squash and spinach. Continue cooking just until the spinach has wilted. Adjust the seasoning.
  3. Divide the soup among four bowls. Serve with country-style bread, if desired.
