Stuffed Calamari with Shallot Sauce

- 2 tablespoons (30 ml) canola oil
- 3 tablespoons (45 ml) brown sugar
- 2 cloves garlic, chopped
- 3/4 cup (180 ml) chicken broth
- 2 tablespoons (30 ml) fish sauce (nuoc mam)
- 2 tablespoons (30 ml) soy sauce
- Pepper
- 8 whole calamari, cleaned and trimmed (medium-sized)
- 1 lb (454 g) ground pork
- 4 green onions, chopped
- 8 cloves garlic, chopped
- 2 tablespoons (30 ml) chopped fresh cilantro
- 2 tablespoons (30 ml) fish sauce (nuoc mam)
- 1 teaspoon (5 ml) sambal oelek
- 8 toothpicks

- In a large skillet, brown the shallots in the oil. Add the brown sugar and garlic and continue cooking until the sauce caramelizes, about 2 minutes. Add the remaining ingredients and simmer for about 2 minutes. Season with pepper. Set aside.
