  • 4 shallots, chopped
  • 2 tablespoons (30 ml) canola oil
  • 3 tablespoons (45 ml) brown sugar
  • 2 cloves garlic, chopped
  • 3/4 cup (180 ml) chicken broth
  • 2 tablespoons (30 ml) fish sauce (nuoc mam)
  • 2 tablespoons (30 ml) soy sauce
  • Pepper
  • 8 whole calamari, cleaned and trimmed (medium-sized)
  • 1 lb (454 g) ground pork
  • 4 green onions, chopped
  • 8 cloves garlic, chopped
  • 2 tablespoons (30 ml) chopped fresh cilantro
  • 2 tablespoons (30 ml) fish sauce (nuoc mam)
  • 1 teaspoon (5 ml) sambal oelek
  • 8 toothpicks

  1. In a large skillet, brown the shallots in the oil. Add the brown sugar and garlic and continue cooking until the sauce caramelizes, about 2 minutes. Add the remaining ingredients and simmer for about 2 minutes. Season with pepper. Set aside.
