Tofu Caprese Salad
Ingredients
- 6 tbsp (90 ml) olive oil
- 1 green onion, chopped
- 1 lemon, zest finely grated
- 1/4 cup (60 ml) lemon juice
- 2 tsp (10 ml) sambal oelek, or to taste
- Salt and pepper
- 3/4 lb (350 g) soft tofu, cubed
- 4 tomatoes, sliced
- 1 can (6 oz/170 g) flaked light tuna, drained (optional)
- 20 small basil leaves
Instructions
- In a bowl, combine all of the marinade ingredients. Add the tofu in a single layer and gently toss to coat. Season with salt and pepper. Cover and refrigerate for 8 hours to allow the flavours to develop.
