To recreate the good taste of chicken shawarma in a quick version, coat chicken thighs with a marinade made of yogurt, garlic, lemon and spices. Cook it on a baking sheet in the oven. Serve the chicken in pita bread with garlic yogurt, lettuce and tomatoes.

- 3/4 cup (180 ml) plain Greek yogurt
- 3 garlic cloves, finely grated
- 1 lemon, zest finely grated and juiced
- 2 tbsp (30 ml) olive oil
- 1 tbsp (15 ml) tomato paste

- 2 tsp sweet paprika
- 1/2 tsp ground cinnamon
- 1 1/2 (675 g) boneless, RICARDO Mediterranean-Style Chicken Breasts (see note)
- 1 red onion, cut into 8 wedges
- 4 pita breads
- 2 cups (60 g) romaine lettuce leaves, thinly sliced
- 1 tomato, cut into halfmoons

- With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with foil.
- In a large bowl, whisk together the yogurt, garlic, lemon zest and juice. Season with salt and pepper. Set aside ½ cup (125 ml) of the yogurt mixture in a small bowl and refrigerate until ready to assemble the sandwiches.
- Add the oil, tomato paste and spices to the large bowl of yogurt. Season with salt and pepper. Mix well. Add the chicken and toss well to coat.
- Place the onion wedges on one side of the baking sheet. Toss with oil. Season with salt and pepper. Spread the chicken mixture out on the other side of the baking sheet. Bake for 20 minutes. Remove the baking sheet from the oven. Set the onion aside on a plate. Using a fork, shred the chicken on another plate. Return the chicken to the baking sheet.
- Preheat the oven to broil. Bake the chicken until some pieces are crispy, about 5 to 6 minutes.
