  • 1 teaspoon (5 ml) green cardamom, opened (retaining only the small beads inside)
  • 1 teaspoon (5 ml) cumin seeds
  • 1 teaspoon (5 ml) coriander seeds
  • 1 teaspoon (5 ml) black peppercorns
  • 1 teaspoon (5 ml) whole cloves
  • 1 cinnamon stick
  • 1/4 teaspoon (1 ml) ground nutmeg
  • 1/2 cup (125 ml) plain yogurt
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 2 tablespoons (30 ml) garam masala
  • 2 tablespoons (30 ml) freshly squeezed lemon juice
  • 1 teaspoon (5 ml) grated lemon zest
  • 1 tablespoon (15 ml) fresh ginger, grated
  • 1 teaspoon (5 ml) salt
  • 12 skinless and boneless chicken thighs

  1. In a large skillet, toast the spices over high heat for 1 minute. Let cool, then finely grind with a mortar or a coffee grinder. Set aside.
