  • 12 cups (3 litres) unpeeled cubed red plums (about 2.3 kg / 5 lbs fresh plums)
  • 4 cups (1 litre) sugar
  • 1/2 cup (125 ml) lemon juice

  1. In a large heavy saucepan, combine all the ingredients. Bring to a simmer, stirring frequently. Attach a candy thermometer in the centre of the pan and simmer until the thermometer reads 104 °C (219 °F). Skim carefully and stir frequently during cooking.
  2. Pour into sterilized jars.
