  • 1/4 cup (60 ml) olive oil
  • 3 tbsp (45 ml) white balsamic vinegar or white wine vinegar
  • 1 tsp dried oregano
  • 1 garlic clove, finely grated
  • 2 romaine lettuce hearts, thinly sliced
  • 1 small radicchio, thinly sliced
  • 1 can (19 oz/540 ml) white beans or Romano beans, rinsed and drained
  • 1/2 English cucumber, cut into halfmoons
  • 1 cup (140 g) cherry tomatoes, halved
  • 4 oz (115 g) Genoa salami, julienned
  • 4 oz (115 g) provolone or mozzarella cheese, diced
  • Pickled banana pepper rings, to taste

  1. In a large bowl, whisk together all of the ingredients. Season with salt and pepper.

We love the simplicity of an Italian-style chopped salad. Just chop all the ingredients, then mix in the dressing. And what about the Italian touch? Salami and mozzarella cheese are added to the vegetables.
