Quick Crunchy Vegetable Salad
Ingredients
- 3 tbsp (45 ml) olive oil
- 1 tbsp (15 ml) lemon juice
- 2 tsp (10 ml) maple syrup
- 9 multicoloured Nantes carrots, unpeeled
- 8 radishes
- 2 cups (60 g) kale leaves, stems removed
- 3 tbsp dried cranberries
- 3 tbsp salted roasted sunflower seeds
Instructions
- In a large bowl, whisk together all of the ingredients. Season with salt and pepper.
