Coconut Pear Crisp

Ingredients

  • 1 1/2 cups (45 g) corn flakes
  • 1 1/2 cups (135 g) shredded coconut (sweetened or not)
  • 1/2 cup (75 g) unbleached all-purpose flour
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 3/4 cup (180 ml) sweetened condensed milk
  • 1 tsp (5 ml) vanilla extract
  • 1/2 cup (105 g) brown sugar
  • 2 tbsp unbleached all-purpose flour
  • 10 ripe but firm Bartlett pears, peeled, cored and cut in 12 wedges each
  • 2 tbsp (30 ml) lemon juice

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C).
  2. In a bowl, combine the dry ingredients. Add the condensed milk and vanilla. Mix well.
