Four-Fruit and Ginger Pie

This gorgeous fruit pie with a ginger crust is the perfect way to end a holiday meal!

Ingredients

  • 1 cup (210 g) sugar
  • 3 tbsp cornstarch
  • 2 cups (280 g) frozen sliced strawberries
  • 2 cups (250 g) frozen raspberries
  • 1 cup (105 g) frozen cranberries
  • 2 large Cortland apples, peeled and diced
  • 2 cups (300 g) unbleached all-purpose flour
  • 2 tbsp brown sugar
  • 1 tbsp fresh ginger, finely grated
  • 2 tsp ground ginger
  • 1 pinch salt
  • 3/4 cup (170 g) cold unsalted butter, diced
  • 1/4 cup (60 ml) ice water
  • 1 egg
  • 2 tbsp (30 ml) milk
  • Sugar, for sprinkling (optional)

Instructions

  1. In a pot off the heat, combine the sugar and cornstarch. Add the fruits and toss to cover in the sugar mixture. Over medium-high heat, bring the mixture to a boil, stirring constantly. Transfer to a bowl. Let cool. Cover and refrigerate until ready to use.
